Happy Wednesday everyone! Can you believe tomorrow is Thursday? Not me. The first day back to work after a long weekend always seems so slow, but then the week seems to catch up at hyperspeed.
My day started early with a trip to the gym. Since I’m taking some time off running (cross your fingers that this pain in my calf actually improves), I stuck with an incline walking workout and a leg/ab weights circuit.

Let me tell you, there’s no better way to humble yourself than an incline walking workout. Talk about wheezing. I didn’t feel great actually, but hey, not every workout is going to go great.
Work today involved hopping back and forth across town for meetings – but I didn’t mind because one of them was at a bakery (YES).
With that, let us start our exploration of WIAW – thanks to the awesome Jenn for hosting!
Breakfast: Pre-workout I had half a banana and chunky PB, so I was really ready for food after the gym. I chose to use up some leftovers in the fridge and had a large egg white scramble (that ice cream I made required EIGHT yolks) with Chorizo chicken sausage and a boatload of Cholula (I put that S#!^ on everything).
Snack @ First Meeting: Oh guys, if you’re ever over in Portland please try to make a trip to Grand Central Bakery. I had this ginormous almond croissant, and it was the best almond croissant I’ve had outside of Paris. Perfect crunch, and the almond filling was so subtly sweet.
Second Snack: I didn’t have time between my 2nd and 3rd meetings to eat my lunch, so I grabbed an apple out of my lunch bag to hold me over.
The office where we met our sponsors for our last meeting let the employees bring their dogs! There were four and I about died of cuteness overload.

“Lunch”: In quotations because I ended up eating it after work, but I’m not kidding when I say I thought about it all day. A mock Chipotle burrito bowl with lettuce, black beans, cilantro-lime rice, grilled chicken, tomatoes, jalapenos, and peach salsa.
We had those for dinner last night too – it might just be better than the original.
Dinner: I wasn’t super hungry after eating lunch so late, so I stuck with roasted broccoli and my first (but nowhere near last) Caprese salad of the summer. So simple. so delicious.
Dessert: That vanilla ice cream was stellar with homemade bananas foster. Plus I got to light the alcohol on fire in the pan – AWESOME.
Plus a frozen banana from my personal Arrested Development party. Just because.

Would you like to work in a place that allowed dogs/had animals?
I’d be a little worried about getting distracted, but I think the animals would also be really calming and fun – so count me in.
